Welcome to Katrina's Kitchen!
In February 2010 I started this blog to first of all address the incredulous comment I received over and over again from people when they found out how little I spent on groceries per week: How do you do it?! At that time, my husband was a full-time graduate student and I was a stay-at-home mom of two young daughters. My husband was on scholarship and received a small monthly amount for some teaching he did on campus and also had a weekend job. I worked as a medical transcriptionist part time from home to help us make end's meet, but our monthly income was a little under $1,000. All our expenses considered, that literally left us with $35 a week for groceries.
Fortunately, we were already accustomed to frugal living, cooking from scratch, and eating from food storage (which we took with us to graduate school).
After a while, I realized that not only did people really want to know how I did it, there were principles of frugal and healthy living that I believed in passionately and wanted to share to help others improve their lives.
Thus Katrina's Kitchen was born.
It is a learning, growing journey and a wonderful adventure! I hope you will join me in changing and improving your lifestyle, health, and budget.
