Question

Please help!

What summer squash dishes do you make that your children like? I have tried so many recipes, some new, some old favorites, but haven't hit one yet that my kids will eat without complaining. (Except, of course, with zucchini I make zucchini bread and cookies, etc, and they love those.) I don't know why they have this bias--crookneck is so pretty and has a sweet, mild flavor--but I'm guessing it's typical.

So how do you get your kids to eat summer squash?

I grate them up in eggs. They blend in with the yellow color of the eggs. My kids hardly know they are there and because they really love scrambled eggs they eat them up. We never have left overs. Good luck. Hope that helps.

My kids always liked "Hutspot" (Cottage Pot) pronounced Hoots-poat, a common dutch dish of mashed potatoes and carrots or other veggie cooked with it. Cook potatoes, carrots, cubed squash, onions, etc all in one pot....and mash well. Puree non-potato veggies before mashing if you'd like, but shouldn't need it if cooked well.

Nope, just butter, salt and pepper. Wait, guess I did use garlic salt or garlic powder occasionally. If company was coming (should do it for my own family too) I'd sometimes mound it with a spoon, drizzle butter and brown it under the broiler...has a very nice pale yellow/orange color. Looks especially nice at Thanksgiving with my beet, carrot, potato, and spinach bread on a platter...all made from the same batch. Will have to remember to send recipe to you.
