Bean Salad Wraps
4 8-inch whole wheat (or other variety) tortillas
1 15-ounce can black beans, rinsed and drained
1/2 c. chopped green sweet pepper
2 Tb. snipped fresh cilantro
1/3 c. mayonnaise dressing or salad dressing
1 Tb. lime juice
In medium bowl, mash black beans slightly. Add sweet pepper and cilantro. Stir in mayo and lime juice.
To serve, spread bean mixture evenly over tortillas. Top with lettuce leaves. Roll up tortillas.
